One of my favorite meat-substitutes, sweet potatoes also happen to be a power food: packed with nutrients including fiber, protein, complex carbohydrates, vitamins A and C, iron.

Sweet Potato Tacos Recipe
1. Saute onions on low heat with a pinch of salt and pepper. Stir until evenly coated in olive oil for 30-60 seconds. Experiment with spices such as chile powder, hot pepper flakes, or cumin and peppers–think jalapeños or for four alarm flavor, habaneros.
2. Add sweet potatoes. Cover the pan to keep them from drying out and cook until soft, for about 10 minutes.
3. Put cooked sweet potatoes into a warm tortilla and top with bell peppers, avocado, and a sprinkle of chile powder.
Serve these tacos de camote or batata with rice or green salad.
Ready for more vegetarian taco dishes? Fill your tortillas with nopal or cactus, zucchini, or rice and beans.
