Quinoa is a super food that is a smart option for vegetarians and vegans because it is rich in minerals and high in protein. For thousands of years, the people of Ecuador, Bolivia, Colombia, and Peru have recognized its nutritional value and energy boosting properties. Now this Andean region secret has gotten out with the United Nations declaring 2013 the International Year of Quinoa.
Try this summer quinoa recipe:
Summer Quinoa and Roasted Pepper Salad Recipe
- 2 cups quinoa seeds
- 2 cups orange juice
- 2 cups water
- 2-3 bell peppers
- 1 spicy pepper, jalepeno or sereno
- 1 large tomato, diced
- 1 cucumber, peeled and diced
- ¼ cup chopped mint
- ¼ cup chopped basil
- ½ cup walnuts or pine nuts
- ½ lime or ¼ cup apple cider vinegar
- ½ cup olive oil
- salt and pepper to taste
- Cook quinoa by combining a tablespoon of olive oil and quinoa seeds in a saucepan for 3-4 minutes, until seeds start to brown. Add water and orange juice, bring the mixture to a boil, then lower heat and cover. Let simmer until all liquid is absorbed, then remove from heat and let cool.
- Roast bell peppers on a grill or comal until lightly charred all over. Remove from heat, let cool, and cut into small pieces.
- In a large bowl, combine lime juice and olive oil and stir in quinoa, peppers, tomato, cucumber, mint, basil, and nuts. Add salt and pepper to taste.
I adapted this recipe, substituting missing ingredients with what I had in the garden and pantry.
I love the flavorful combination of sweet citrus and mint with spicy roasted peppers, and the added texture of the cucumbers and walnuts.
This healthy and sabroso salad is a perfect summer receta: all vegetable and herb ingredients are in-season and available fresh from your home garden or local farmers’ market.
