Celebrate 20 de julio or Colombia’s Independence Day with a sabroso Colombian favorite: patacones with hogao sauce.
These savory fried plantains, also know as tostones, are easy to prepare and make a delicious vegetarian appetizer or side dish for any occasion.
Natalie’s Patacones Recipe
- 2 green plantains
- vegetable oil for frying
- salt to taste
- Peel plantains and cut into 1 inch slices.
- Heat oil in frying pan and add plantain slices.
- Fry 3 minutes on each side until bright yellow.
- Remove slices from oil and place on paper towels until dry.
- Use the bottom of a glass to flatten plantains until 1/4 inch thick, sprinkle with salt, and return to oil.
- Fry again for 3 minutes on each side until golden, then remove from oil and let dry.
Natalie’s Hogao Sauce Recipe
- 2 large tomatoes
- 4-5 shallots or one medium onion
- 2 cloves garlic
- 1 tablespoon cumin
- 2 tablespoons chopped parsley or cilantro
- salt and pepper to taste
- olive oil
- Chop all ingredients.
- Saute onions and garlic in olive oil until golden.
- Add tomatoes and cumin and let cook for 10 minutes on medium heat, stirring regularly.
- Add salt, pepper, and parsley. Let simmer for 10-15 minutes, until thick.
- Remove from heat.
Since an amiga from Colombia first introduced me to this plato in college, I’ve been hooked. The crispy plantains are my go-to snack when I’m craving something salty, and are also great with guacamole.
Don’t be shy with the salsa–this condiment made entirely of vegetables is as healthy as it is delicioso. Not only is hogao a low-calorie flavoring, its main ingredient cooked tomato has cancer-fighting properties which I point out in Angelina Jolie Inspired Meatless Monday: 7 Cancer Fighting Foods.
